Multigrain gluten free rotis

Delicious soft muti grain gluten free Rotis:

Wheat has a protein called ‘gluten’ which is responsible for the elastic texture of the dough. Gluten makes the dough stretchy and hence you can roll wheat rotis big and thin.

Gluten however has no nutritional value and can’t be digested fully by human body. For some people, it causes allergic reactions, for others, it can cause bloating or diarrhea.

The process however is a little different than a normal wheat rotis due to absence of gluten. Following recipe however ,will help you make deliciously soft rotis:

You Need:

Gluten free Atta/Flour – 2 cups

Warm water – 1 cup

Ragi Atta/Flour – 1/4 cup

1/2 teaspoon ghee

Take gluten free atta/flour in a wide plate. Gently fold in warm water little by little to knead a slightly wet dough.

At this stage, if you want, you can cover and rest it for 10 minutes or add Ragi atta/flour and knead it for atleast 8-10 minutes. apply thin layer of ghee once done.

The dough is ready.

To make rotis, take a small portion of dough and make smooth round ball.

Dust/roll in dry flour and gently roll the dough into flat rotis with rolling pin. Both Ragi and ghee helps in rolling the rotis thin and prevent tearing of rotis.

Roast on tawa on both sides.

If you like you can smear some ghee on the cooked rotis before serving.
